I grew up eating this soup and it definitely brings back memories of my childhood growing up in Portugal. I think that you can’t beat homemade soup, its fresh, delicious and made with love. The good thing about this soup is that you can adapt it to make it your own, by changing the vegetables to suit you.
Vegetable & Watercress Soup
You can enjoy this recipe as a meal and take some to work the following day.
Ingredients
- 1 medium-size onion (chopped)
- 2 cloves garlic (chopped)
- 200g butternut squash (diced)
- 150g carrots (diced)
- 1 courgette (diced)
- 1 leek (sliced)
- 1 large potato (diced)
- 2 litres vegetable stock
- Salt & pepper to taste
- 3 tbsp olive oil
- 150g watercress

Instructions

Place a large pan over medium heat, pour 1 tbsp of olive oil and shallow fry the onion and garlic until golden (approximately 3-5 minutes).

Add all of the vegetables into the pan, along with the vegetables stock, salt and pepper and let the soup simmer for 10-15 minutes until the vegetables are tender.

Allow to cool to room temperature.

Blend the soup using your Ninja Kitchen System (adjust seasoning if needed), place the blended soup back into the pan and add the watercress and 2 tbsp olive oil – simmer at low heat for 5 minutes or until heated through to allow the watercress to soften (stirring occasionally).

Serve with your favourite bread.
