Tropical Energy Bars

When it comes to eating healthy on the go, there are loads of options out there but many are covered in unnecessary packaging which isn’t great for the environment! So why not make your own – these tropical infused ones are so easy to make, packed full of goodness and can be kept in an airtight container. You can keep them in your bag for when hunger calls!

Ingredients

  • 250g rolled oats
  • 50g seeds (I used pumpkin)
  • 50g coconut chips
  • 50g goji berries
  • 50g dried mango pieces
  • 1tsp cinnamon
  • 100g maple syrup
  • 6 tbsp peanut butter
  • 100g dates (soaked in 100ml hot water for 10 mins)
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 180 degrees C.

  2. Mix together the oats, seeds, coconut, dried fruit and cinnamon in a bowl. Place the dates (and the water they have been soaked in), maple syrup, peanut butter and vanilla into your Ninja Kitchen blender and whiz up until smooth – about 1 minute.

  3. Spoon this mixture into the oats and mix really well to combine everything. Press into a greased and lined 9x9in baking tin and smooth out evenly.

  4. Bake for 15 minutes until golden then leave to cool before cutting into 9-12 squares. Enjoy!
