Dates are an amazing dairy free, natural alternative to caramel. This simple recipe for a triple chocolate version is gluten-free, refined sugar-free and vegan!

Ingredients

  • For The Base
  • 100g gluten-free oat flour
  • 50g ground almonds
  • 20g cacao powder
  • 45ml maple syrup
  • 25g coconut oil, melted
  • For The Middle
  • 200g Medjool dates, pitted
  • 40g coconut oil, melted
  • 20g cacao powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • For The Topping
  • 150g dark chocolate chips (dairy free)
  • Cacao nibs (optional)

Instructions

  1. Line a square cake tin with baking paper

  2. Combine the ingredients for the base then press the mixture into the tin

  3. Place the tin in the fridge while you prepare the middle layer

  4. Add the dates, coconut oil, vanilla and salt to your food processor

  5. Puree until you have a smooth paste

  6. Add the cacao powder and puree again until combined

  7. Spread the date mixture over the base layer, place back in the fridge for an hour to set

  8. Once set, melt the dark chocolate chips and pour the melted chocolate over the top

  9. Sprinkle over the cacao nibs and place back in the fridge for an hour to set

  10. Cut into bars and store in the fridge
