Triple Chocolate And Strawberry Puddings

These easy to make puddings are the perfect summer dessert combining two favourites: chocolate and strawberries, a match made in heaven! Using oats to form a base and coconut cream to create a creamy topping coupled with a rich chocolate drizzle and berries equals a divine sweet treat!

Ingredients

  • For the Base
  • 100g oats
  • 3 tbsp cacao or cocoa powder
  • 3 tbsp maple syrup
  • 2 tbsp coconut oil
  • 2 tbsp almond milk
  • 1/2 teaspoon vanilla extract
  • For the Filling
  • 1 can coconut cream, chilled in the fridge overnight
  • 75g dark chocolate broken up into pieces
  • 1 tsp coconut oil
  • 3 tbsp cacao powder
  • 2 tbsp maple syrup
  • Handful of fresh strawberries
  • For the Drizzle
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 4 tbsp cacao or cocoa

Instructions

  1. First make the base: Place the oats, cacao/cocoa powder with the coconut oil, maple syrup, milk and vanilla in your Ninja Kitchen blender and pulse a few times until a dough is formed.

  2. Divide this between a 6-hole muffin tin and press the dough in to form a generous, even base.

  3. Scrape the coconut cream from the can and place in a large bowl. Gently melt the chocolate and coconut oil and stand for 5-10 minutes. Pour this into the bowl with the coconut cream along with the cacao/cocoa powder and maple syrup. Whip or beat well until thick and combined.

  4. Spoon this over each base and fill to reach the top. Chill for at least 6 hours or overnight to set.

  5. When ready to serve, pop out of the moulds. Gently melt the coconut oil and whisk with the maple syrup and cacao/cocoa powder to form a sauce. Drizzle over each pudding and top with half of a strawberry and scatter over some cacao nibs. Enjoy!
