For the tzatziki lovers with a vegan twist. Being higher in protein from the tofu than normal tzatziki, this dip will have you dipping anything and everything in it. Quick and simple to make, whizz this up and enjoy with some juicy flatbreads or drizzle over your dinner.
- 250g extra firm tofu (drained)
- 2 tbsp extra virgin olive oil
- 2 garlic cloves
- Juice from 1/2 lemon
- 1/2 cucumber
- 1 tsp chopped mint
- Pinch of salt
- Pinch of pepper
In your Ninja blitz all of the ingredients apart from the cucumber until smooth
Chop your cucumber in half and scrape out the seeds (the watery part)
Grate the rest of the cucumber and stir into mixture
Serve and enjoy!
