Pile up the waffles, get the coffee brewing, and you’ll have a totally over the top brunch for friends within the hour. Just remember to get the cashews soaking the night before, and you’ll also have a super creamy sauce to cover everything in. A perfect hangover fixer.

Ingredients

  • For the maple syrup cashew cream
  • 100g cashew nuts
  • 2 tbsp maple syrup
  • 1 tsp vanilla essence
  • For the waffle batter
  • 1 large sweet potato
  • 45g porridge oats
  • 150g plain flour
  • 1 1/2 tsp baking powder
  • Pinch salt
  • 300ml almond or soy milk
  • 1 tsp white or apple cider vinegar
  • 60ml sunflower oil
  • 60ml agave syrup or maple syrup
  • vanill
