Super Boost Buckwheat Fudge & Chocolate Bites

These are by far the easiest treat you can possibly make! They don’t need to bake and they take very little time to throw together. I love how fudgy and nutty the base is thanks to Jakes Boost nut butters. I have added some toasted buckwheat which add a lovely crunch.

This is also the perfect treat to make in advance and to store in the freezer for when you need a sweet afternoon pick me up.

Instructions

  1. Preheat the oven at 150 degrees Celsius. Line a baking tray with some parchment paper and spread the buckwheat groats on top. Roast them in the oven for 20 minutes. Give them a shake from time to time to prevent from burning.

  2. Remove the buckwheat groats and place them into a bowl to cool down for about 10 minutes.

  3. To make the fudge layer: simply place all the ingredients into a food processor bowl and mix well until you a fairly smooth mixture. Pour into a brownies tin lined with parchment paper.

  4. Place it in the freezer for around 1 hour until is completely solid.

  5. To make the chocolate layer mix all the ingredients into a bowl except for the coconut chips. Remove the tin from the freezer and pour the chocolate sauce on top. Sprinkle with the coconut chips until it’s all covered.

  6. Place the tin back in the freezer for another hour until is all completely set.

  7. Cut into slices and enjoy!

    Keep any leftover in the freezer as they will tend to melt a bit in the fridge.
