Ingredients

  • 75g cashews, soaked for 3 hours
  • 80g desiccated coconut
  • 20g oats
  • 100g medjool dates, pitted
  • 2 tbsp freeze dried strawberry powder
  • 1 tsp coconut oil
  • 1 tsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • Juice & zest of 1/2 lemon
  • Coating
  • 2 tbsp freeze dried strawberry powder

Instructions

  1. Soak the cashews for 3 hours, rinse and drain well.

  2. Place all of the ingredients into a food processor and blend until the mixture begins to come together.

  3. Turn the mixture out into a bowl and roll into bite size balls using the palm of your hands.

  4. Roll the balls in additional freeze dried strawberry powder.

  5. Pop into the fridge for about an hour.

    Store in a fridge for up to a week.
