Ginger and dates work together magically in this flapjack recipe, packed with oats and a hint of orange. Great as an energy-boosting snack!
Sticky Date & Ginger Flapjack
- 250g margarine
- 200ml maple syrup or date nectar
- 100g dates
- 50g coconut sugar
- 100ml orange juice
- 350g rolled oats
- 1 tsp ground ginger
- 1 tsp coconut oil
- 50g dark chocolate, broken up into pieces
Preheat the oven to 180 degrees C and grease and line a 9x9in baking tin.
Gently melt the margarine, maple syrup/date nectar and coconut sugar.
Place the dates in a pan with the orange juice and simmer for 5 minutes until softened. Allow to cool a little then place in your Ninja Kitchen Nutri Ninja blender along with the melted margarine mixture and blend to form a thick syrup mixture.
Place the oats and ginger in a bowl, add the date mixture and mix well until combined. Tip into the tin and press down evenly.
Bake for 20 minutes until golden then leave to cool in the tin. After 10 minutes cut into 9-12 pieces but leave in the tin.
Gently melt the coconut oil and chocolate and drizzle over once cooled.
