Colder days always make me want to have sweet things with ginger. These bliss balls are faintly spicy, chewy and rich. They make the perfect snack for that 3pm energy dip.
Stem Ginger, Pistachio & Dark Chocolate Bliss Balls
- 8 Medjool dates, pitted
- 2 tbsp coconut oil, melted
- 1 piece stem ginger, grated finely
- 2 tbsp cacao powder
- Pinch of salt
- 65g dark chocolate, melted
- 1 tbsp pistachios, slivered
Add the medjool dates, coconut oil, stem ginger, cacao and salt to the blender and blend till combined.
Roll into 1 inch balls and cover in melted chocolate.
Top with pistachios and refrigerate for 30 minutes.
