Ingredients

  • 2 tbsp flaxseed + 6 tbsp water
  • 60g oat flour
  • 50g coconut sugar
  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cardamom (optional)
  • 1/2 tsp baking powder
  • 100g smooth almond butter
  • 100g maple syrup
  • 1 large carrot, grated
  • 40g raisins
  • 40g walnut pieces

Instructions

  1. Preheat the oven to 170C and line a large baking tray with greaseproof paper

  2. Mix together the flaxseed and water, and leave for 5 minutes to thicken

  3. Add to your Ninja Kitchen Nutri Ninja with the oat flour, coconut sugar, cinnamon, nutmeg, cardamom, baking powder, nut butter and maple syrup and whizz up to form a soft dough. Stir in the carrots, raisins and walnuts

  4. Spoon about 8-10 spoonfuls onto the tray (spaced out) and press down. Bake for 10-12 minutes then leave to cool – and enjoy!
