Spiced Apple, Date & Coffee Puddings

These fruit-packed puddings epitomise everything about autumn: warming spices, seasonal apples, rich dates and a spiced coffee sauce to form these delicious comforting puddings. Ideal served on a cold day!

Ingredients

  • For the Puddings
  • 125g oat flour
  • 50g ground almonds
  • 75g coconut sugar
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 100g chopped dates soaked in 50ml boiling water for 10 minutes
  • 2 tbsp flaxseeds + 4 tablespoons water (leave for 10 minutes)
  • 100g apple puree
  • 1 tsp vanilla extract
  • 2 tbsp almond milk
  • For the Coffee Sauce
  • 2 tsp coffee dissolved in 200ml boiling water
  • 50ml almond milk
  • 3-4 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • Pinch of nutmeg
  • 1-2 tbsp conrflour

Instructions

  1. Preheat the oven to 180 degrees C.

  2. Make the puddings: Place the oat flour, ground almonds, coconut sugar, baking powder and spices in a bowl.

  3. Place the dates + their soaking liquid plus the flaxseed mixture, apple puree, vanilla and milk into your Ninja Kitchen Nutri Ninja blender and whizz up until smooth.

  4. Pour this mixture into the dry ingredients and mix to combine and form a batter. Spoon this between 3-4 150ml greased pudding tins, to reach the top.

  5. Bake for 30 minutes until golden and firm to the touch.

  6. Meanwhile heat the coffee, milk, spices and maple syrup in a pan. Whisk together the cornflour with 1-2 tablespoons water to form a paste, then pour in and keep whisking for a few minutes on a medium heat. The sauce should thicken nicely.

  7. Leave the puddings to stand for 10 minutes once out of the oven then tip upside down and pour some of the sauce over to cover. Top with walnut pieces and extra chopped dates and enjoy!
