Secret Ingredient Chocolate Mousse

This chocolate mousse isn’t your standard chocolate mousse. For one, it’s completely dairy and refined sugar free but it also contains sweet potato. Yes, sweet potato! This may sound a little strange but once steamed and blended together with coconut cream, maple syrup and rich cacao powder it forms the creamiest, smoothest, most indulgent chocolate mousse you’ll ever taste. I promise, you’ll never guess it contains sweet potato!

Top with raspberries or strawberries for added natural sweetness or a some chopped nuts and a drizzle of maple syrup for something a little extra.

Ingredients

  • 350g sweet potato
  • 3 tbsp coconut cream
  • 4 tbsp maple syrup
  • 4 tbsp cacao powder
  • 1 tbsp cashew butter (optional)

Instructions

  5. Chill in the fridge for at least 30 minutes before serving.
