Rhubarb, apples, cinnamon and crumble – these things epitomise this time of year don’t they?! These layered bars consist of an oaty ‘shortbread’ base, topped with apples and rhubarb and finished with an oaty, nutty crumble mixture. Great for a mid-morning or afternoon snack or smothered in custard for a comfort food dessert!
Rhubarb & Apple Crumble Slices
- For The Base
- 100g oat flour
- 75g ground almonds
- 25g coconut flour
- 50g coconut sugar
- 1 tsp cinnamon
- 3 tbsp almond milk
- 3 tbsp melted coconut oil
- For The Apple & Rhubarb Layer
- 2 large apples, peeled and chopped
- 3 sticks rhubarb, chopped
- 4 tbsp coconut sugar
- Juice 1 lemon
- For The Crumble Topping
- 75g oats
- 25g flakes almonds
- 1/2 tsp cinnamon
- 3 tbsp maple syrup
- 2 tbsp melted coconut oil
Preheat the oven to 180 degrees C and grease and line a 9x9in baking tin.
First make the base: Pulse everything in your Ninja Kitchen Nutri Ninja blender a few times to form a slightly crumbly dough (add a dash of water if needed, or more milk) then tip into the tin and press down evenly with your hands to cover the base. Bake for 10 minutes.
Meanwhile place the apples, rhubarb, coconut sugar and lemon juice in a pan. Simmer for 10 minutes until softened and the liquid has been absorbed.
Spread the fruit over the part-baked base in a generous layer.
Mix together the crumble topping ingredients to form a sticky mixture then sprinkle over the fruit to cover.
Return to the oven and bake for 15-20 minutes until golden. Leave to cool in the tin, then cut into 9-12 bars. Enjoy!
