Red Pesto & Rocket Pasta

I love pesto, it’s so full of flavour and works with so many dishes! Green pesto is the classic but red pesto makes such a nice change and tastes just as (if not more) delicious. This recipe for a rich and creamy sun-dried tomato pesto is one of my favourites, I’ve made it a few times now but I still can’t get enough of it. It’s so easy to make, it can be thrown together in 10 minutes and it doesn’t require any fancy ingredients but I just love the simplicity of it – I can see myself coming back to this recipe time and time again!

The red pesto works perfectly with pasta and peppery rocket to create a tasty and nourishing meal that everyone will love.

Ingredients

  • 100g sun-dried tomatoes
  • 2 cloves of garlic
  • 2 tbsp olive oil
  • 3 tbsp lemon juice
  • 1 handful fresh basil
  • 400g toasted pine nuts
  • 6 tbsp water
  • 300g brown rice pasta
  • 50g rocket
  • Pinch pepper

Instructions

  1. To make the pesto, drain and rinse the sun-dried tomatoes then add them to your Ninja Kitchen blender along with the garlic, olive oil, lemon juice, fresh basil, roasted pine nuts and water. Blend until smooth – if you’d like a thinner consistency just add a little more water. Put this to one side while you make the pasta.

  2. Bring a saucepan of water to the boil then add the pasta. Cook for about 10 minutes or until the pasta is ready!

  3. Drain the pasta then place it back into the saucepan. Stir in the red pesto and the rocket.

  4. Sprinkle with a little more black pepper before serving and enjoy!
