Perfect for the summer (and winter too), these ice-lollies are a great treat if you are looking for a delicious recipe without having to feel guilty. Packed with fresh raspberries and lemon, it’s like eating pink lemonade ice-lollies. Yum!
Raspberry and Lemon Ice Lollies
- 125g fresh raspberries
- Juice and zest of 2 lemons
- 500g fat free yogurt
- 80ml coconut milk
- 1tsp vanilla extract
- 10 raspberries chopped
Using the cup of your Ninja Kitchen system, place 125g of fresh raspberries and 3-4 tbsp of water and pulse until the raspberries turn into mush.
Sieve the raspberries over a bowl to remove the seeds. Using the bowl of your Ninja Kitchen System, pour in the mushed raspberries, juice and zest from the two lemons, yogurt, milk and vanilla – pulse several times.
Remove the bowl and blade from the machine, pour in the chopped raspberries and mix with a spoon. Pour the mixture into silicone ice-lolly moulds and freeze overnight.
