A simple, easy but colourful and nutritious way to start the day: a combination of chia pudding served alongside a vibrant thick smoothie topped with crunchy additions. A great breakfast or dessert to enjoy in summer.
Purple Smoothie and Chia Seed Bowl
- For the Chia Pudding
- 3 tbsps chia seeds
- 200ml yoghurt, milk or a dairy free alternative
- 1/2 tsp vanilla extract
- 2 tbsps maple syrup
- For the Smoothie
- 2 frozen bananas
- 2 large handfuls of frozen berries
- 150ml coconut water
- coconut chips
- goji berries
Mix together all of the chia pudding ingredients in a bowl or container and keep in the fridge. Chill for at least 1 hour.
When ready to serve, whizz up the frozen bananas, berries and coconut water in your Ninja Kitchen blender until thick and smooth.
Spoon the chia puddings between two bowls then pour over the smoothie. Now decorate with your toppings and enjoy!
