Pumpkin Truffles

I love hiding veggies in the desserts. It adds so many benefits, reduce the calories and such an awesome vegetable like pumpkin or butternut squash actually adds a subtle sweetness. And if you won’t tell that it’s there no one will ever notice.

Ingredients

  • 250g dates
  • 100g cooked pumpkin
  • 100g walnuts
  • 50g cacao nibs
  • 1 tbsp cinnamon

Instructions

  1. In the food processor combine dates and pumpkin and process until completely smooth.

  2. Add walnuts, cacao nibs, and cinnamon and continue blending until desired texture is achieved.

  3. I like mine relatively smooth with a little crunch from cacao nibs so I blend for about 3 minutes.

  4. Form the balls with wet hands (if the batter is too sticky you can place it for half an hour  in the fridge to firm up a little).

  5. Roll in the toppings of your choice.
