If you’re looking for the perfect Autumnal themed sweet treat, then these have got you well and truly covered! These doughnuts might not be your classic fried cinnamon sugar ring doughnuts, however, they are delicious none the less and you can make them in the comfort of your own kitchen! These are super light, fluffy and filled with warming, festive flavours! They’re also completely dairy free and have been oven baked, rather than deep fried.
Pumpkin Spiced Baked Doughnuts With Coconut Glaze
Ingredients
- 1 ripe banana
- 70g honey
- 55g vegan butter
- 120g spelt flour
- 40g ground almonds
- 1 whole egg
- 1 tsp baking powder
- 60ml almond / coconut milk
- 1 tsp mixed spice
- Pinch salt
- Glaze
- 4 heaped tbsp vanilla coconut yoghurt
- 1 tbsp honey / agave syrup
- Pinch mixed spice

Instructions

Preheat the oven to 180c and lightly grease a silicone doughnut tray.

In your Ninja Food Processor, combine the banana, egg, vegan butter, milk and honey, then blend until smooth and creamy.

In a mixing bowl, add all of your dry ingredients together and mix to incorporate.

Pour over the wet ingredients and fold these into the dry mixture.

Divide the mixture into your doughnut mould and place these into the oven for 15-20 minutes to bake.

Once the doughnuts appear golden on top and a skewer comes out clean, remove from the oven and allow to cool before carefully removing from the mould.

To make the glaze, mix together the coconut yoghurt, spice and honey.

Once the doughnuts have cooled, decorate with the coconut glaze and dig in!
