Pulled Mushroom & Cashew Cheese Veggie Pizza

This is such an easy way to make home made pizzas that are super delicious and actually completely meat and dairy free. Using the cashew yoghurt to make the cheese really speeds up the process and creates such a smooth and creamy texture! You can also use this as a sauce, dip or whatever else you fancy!

Ingredients

  • For the Cashew Cheese
  • 1 pot of Nush Cashew Natural Yogurt
  • 2 Heaped tbsp nutritional yeast
  • Pinch sea salt and pepper
  • Splash non-dairy milk
  • 1 crushed garlic clove
  • For the Pulled Mushrooms
  • 2 Portobello mushrooms
  • 1 tbsp coconut aminos
  • 1 tsp smoked paprika
  • Pinch chilli flakes
  • 1 tsp agave nectar
  • For the Pizza Sauce
  • 1 red bell pepper
  • 2 small shallots
  • Dash Olive oil
  • 2 garlic cloves
  • Handful cherry tomatoes
  • 4 tbsp tomato puree
  • Pinch salt and pepper

Instructions

  1. Remove the gills from the inside of the mushrooms and pull apart to create a shredded, meat like texture.

  2. In a bowl, combine the coconut aminos, agave, chilli flakes & paprika and add the mushroom pieces into the bowl to marinate.

  3. Add a little olive oil in a frying pan over medium heat. Finely dice the shallots and add these into the pan. Crush in the garlic clove and sauté until fragrant

  4. Dice the pepper and slice the tomatoes in half. Cook these along with the shallots and garlic until softened. Remove from heat and allow to cool to room temperature.

  5. Transfer the mixture into a blender and blend with the tomato puree, salt, pepper, a few fresh basil leaves and a tbsp of the cashew yoghurt.

  6. Blend until smooth and creamy then transfer into a small saucepan and heat gently to allow the sauce to reduce slightly. For the cashew cheese, pour the yoghurt into a saucepan and heat gently over a low heat.

  7. Stir in the garlic, nutritional yeast, salt & pepper and milk and continuously stir to allow everything to melt together and thicken into a gooey, cheese like texture.

  8. Heat a little oil In a frying pan and cook off the BBQ mushroom meat until crispy and caramelized.

  9. To assemble the pizzas, spread a little of the sauce over the bases then layer on your veggies of choice.

  10. Add dollops of the cashew cheese over the pizza and scatter the pulled mushroom pieces. Bake in the oven for around 10 minutes, then serve and enjoy.
