Puffed Quinoa and Peanut Butter Bars

Ingredients

  • 3/4 cup pitted dates
  • 1 cup peanut butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1 cup puffed quinoa
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup chopped almonds
  • Optional extras
  • Chocolate chips
  • Goji berries
  • Shredded coconut

Instructions

  1. Blend the dates in a food processor until they form a paste

  2. Melt the peanut butter in a small saucepan or microwave and add it to the food processor with the vanilla extract, cinnamon and salt. Pulse until well combined

  3. Add the puffed quinoa, chopped almonds, pumpkin and sunflower seeds and pulse until everything is combined (try not to over mix)

  4. Line a 8X8 baking tray with parchment paper and transfer the bar mixture into the pan

  5. Use your hands to press the mixture down evenly into the pan

  6. Place in the fridge to set for 2 hours then cut into bars
