Protein Chocolate Brownies

If you are trying to increase your protein intake – this recipe is perfect for you. It is gluten-free, refined sugar free and overall guilt-free! Adding the sweet potato means you do not have to add fatty ingredients like butter or large amount of oil as the sweet potato adds moisture to the recipe. You can veganise this recipe simply by swapping to a plant-based protein powder and chia/flax eggs

Ingredients

  • 700g sweet potato - peeled and diced
  • 100g gluten free oats
  • 70g chocolate whey protein
  • 3 tbsp stevia
  • 2 tbsp melted coconut oil
  • 5 tbsp raw cacao powder
  • 2 eggs
  • 1/2 tsp bicarbonate of soda
  • 2 protein bars of choice

Instructions

  1. Begin by peeling the sweet potato and dicing

  2. Boil the sweet potatoes in hot water until tender

  3. Pre-heat the oven to 170c degrees

  4. Allow to cool then place the boiled sweet potatoes in the bowl of you Ninja Kitchen System with the metal blade – add the remaining ingredients minus the protein bars and pulse until you achieve a thick chocolaty dough

  5. Place the brownie dough in a baking tray lined with greaseproof paper (you want the brownies to be about 4cm thick)

  6. Chop the protein bars into small chunks and sprinkle evenly over the brownies

  7. Place the brownies in the oven and bake for approximately 30-35 minutes – reduce the temperature if you feel the brownies are crispy on top

  8. Remove the brownies from the oven and let the brownies cool completely before removing from the baking tray (top tip – I find that letting them cool completely and then placing them in the fridge for 1-2 hours – allow you to then cut them perfectly)
