Protein Blueberry, Coconut and Chocolate Balls

Yummy chocolate coated blueberry balls, packed with natural sweetness from the desiccated coconut and healthy fats from the coconut oil. Adding protein powder to the recipe allows these treats to be a perfect snack for a quick sweet pre-workout protein treat.

This recipe makes approximately 8-10 balls depending on the desired size.

Ingredients

  • 100g oats
  • 150g desiccated coconut
  • 3 tbsp blueberry powder
  • 5 tbsp agave nectar
  • 140ml coconut oil
  • 25g protein powder of choice (I used vanilla flavour)
  • 100g sugar-free milk chocolate
  • Sea salt flakes (optional)

Instructions

  1. Pour the oats in to the bowl of your Ninja Kitchen System and using the metal blade, blitz for a few seconds until the oats turn into flour

  2. Add the desiccated coconut and pulse to release the oil from the coconut

  3. Pour in the remaining ingredients and pulse

  4. Begin rolling the balls and place them in the fridge for 1-2 hours

  5. After 1-2 hours, melt the sugar-free chocolate and roll the blueberry in the chocolate to cover them

  6. Sprinkle with sea salt flakes (optional)
