Protein Bakewell Chia Seed Flapjacks

A delicious low sugar protein packed take on the famous almond flavour treat. Packed with delicious oats and proteins – this makes a perfect post workout treat. This recipe is vegan and gluten free

Ingredients

  • For the base
  • 400g gluten free oats
  • 25g vanilla protein (vegan optional)
  • 3 tbsp stevia
  • 1 tsp almond extract
  • 100ml coconut oil
  • 50g dairy free butter (melted)
  • For the crust
  • 100g gluten free oats
  • 100g ground almonds
  • 25g vanilla protein (vegan optional)
  • 2 tbsp chia seeds
  • 1.5 tbsp stevia
  • 50g dairy free butter (melted)
  • 1 tsp almond extract
  • Extra ingredients
  • 250g sugar-free cherry jam (you can use strawberry jam if you prefer)
  • 20g almond flakes

Instructions

  1. Begin by pre-heating the oven to 180c degrees

  2. Using the bowl of your Ninja Kitchen System and the plastic blade, pour in all of the crust ingredients and blitz until all of the ingredients are well combined

  3. Transfer the mixture into a baking train lined with greaseproof paper and press down

  4. Add the sugar-free cherry jam directly over the base of the flapjacks and spread evenly

  5. Prepare the crust of the flapjacks by adding all of the ingredients again to the bowl of your Ninja Kitchen System using the plastic blade and blitz

  6. Pour the mixture over the jam bit by bit (do not press down) – then scatter the almond flakes around the flapjacks

  7. Place in the oven and bake for approximately 18-20 minutes

  8. Allow the flapjacks to cool before chopping them into squares
