A delicious twist on the old traditional apple crumble, these muffins are packed with flavour. Free from refined sugars, these muffins are perfect for that guilt-free treat.
Protein Apple & Cinnamon Crumble Muffins
Ingredients
- For The Crumble
- 1 1/2 tsp coconut oil
- 6 apples
- 3 - 4 tbsp Stevia
- 1 tbsp ground cinnamon
- 4 tbsp oats
- For The Batter
- 50g natural whey protein
- 150g self-raising whole-wheat flour
- 1 tsp baking powder
- 75g Stevia
- 1 tsp bicarbonate of soda
- 1 tsp vanilla extract
- 160ml milk
- 100g melted butter
- 2 large eggs

Instructions

Begin by pre-heating the oven to 180C degrees.

Prepare the crumble, wash the apples, and chop them into small squares (remove the seeds).

Melt the coconut oil in a small saucepan at medium-low, add the chopped apples, stevia and cinnamon and allow the apples to caramelise.

Once the apples have caramelise (5-10 minutes), turn off the heat and pour in the oats and mix with the apples.

Using the bowl of your Ninja Kitchen System with the dough blade; prepare the cake batter by pouring the dry ingredients, pulse a few times to mix the dry ingredients together.

Pour the vanilla extract, milk, melted butter and eggs and pulse a few times to allow the ingredients to combine together and form the batter.

Distribute the cake batter into greased muffin tins; share the apple crumble mixture between the muffins.

Place the muffins in the oven and cook for 15-17 minutes.

Remove the muffins from the oven and allow them to cool before removing from the muffin tins.
