These tiny Pina Colada Power Balls are packed with a zesty pineapple and lime punch and a dose of healthy fats. Who said healthy snacks were boring?
Pina Colada Power Balls
- 1 cup cashews
- 1 cup desiccated coconut
- 1 cup dried pineapple
- 3 tbsp maple syrup/agave nectar
- 1 tbsp lime juice
- Zest of 1 lime
- Splash vanilla extract
Place all of the ingredients into the food processor bowl and hold down ‘Auto-iQ PULSE’ for a few pulses. Select the ‘LOW/DOUGH’ setting and blend.
Scrape down the sides then repeat until the ingredients are fully combined and you reach a smooth dough like consistency that sticks together when squeezed between your thumb and forefinger.
Take a tablespoon of dough at a time and roll the mixture into balls between the palms of your hands.
Place onto a non stick sheet of paper and set to one side. Store in an airtight container in the refrigerator and consume within 1 week.
