Peppermint Crunch Popcorn (Gluten-Free, Vegan)

Peppermint Crunch Popcorn might just be the best festive combo ever – buttery popcorn, raw chocolate, and crunchy peppermint pieces.

Notes:

If fully refined sugar-free – sub for 50g candy canes for 50g coconut sugar/erythritol/xylitol and blend at the start with the rest of the sugar. Then, add another 1 tsp peppermint extract to your cacao butter when melting.

Ingredients

  • For The Popcorn
  • 1 1/2 tbsp butter, ghee, or vegan butter
  • 1 1/2 tbsp coconut oil
  • 55g popcorn kernels
  • For The Peppermint Chocolate
  • 100g cacao butter
  • 1 tsp peppermint extract
  • 50g coconut sugar / erythritol / xylitol
  • 25g cacao powder
  • 1/4 tsp sea salt
  • 50g peppermint candy canes/sweets/lollies
  • Gold lustre dust

Instructions

  1. In a large heavy pan heat the butter and coconut oil over a medium-high heat. Add 1 or 2 kernels to the pan and cover. Once the kernels pop, immediately add the remaining popcorn kernels and cover with a lid. Gently shake the pan until the corn is popping every few secondsĀ  (about 4 or 5 minutes). Once the popping stops turn off the heat and pour out the popcorn into a large mixing bowl. Set to one side.

  2. Add your coconut sugar/erythritol/xylitol and sea salt to your small Ninja Cup, screw on the lid and give a shake. Process on the NUTRI NINJA Ultra Blend setting until powdered. You may need to shake the contents and process a few times to achieve the desired result. Leave to one side.

  3. Melt your cacao butter and peppermint extract over a bain marie. Once melted stir in your powdered sugar and cacao powder then transfer the chocolate back into your ninja cup. Leave to cool for 10 minutes then blend on low for 5-10 seconds. Remove the lid and leave to cool until thickened.

  4. Whilst the chocolate is cooling break up your candy canes and place into the bowl of your Ninja food processor. Blend on low, gradually moving up to high until powdery. It’s okay if you have a few small chunks as this adds to the texture!

  5. Pour the cooled chocolate over your popcorn and stir to coat with a silicone spatula. Next, add your powdered candy canes and stir again until fully combined. Leave to set then break up and serve. Dust with a light coating if golden lustre dust if you wish.
