They say breakfast is the most important meal of the day – but so many of us skip it. With these breakfast muffins, there’s no excuse! Packed with goodness – oats, pears and blueberries – these are ideal to make ahead and grab on the run so you can set the day off to a healthy, energy-boosting start.
Pear & Blueberry Breakfast Muffins
Ingredients
- 150g rolled oats
- 50g ground almonds
- 75g coconut sugar
- Zest of 1 orange
- 1 tsp cinnamon
- 1 tsp baking powder
- 200ml almond or oat milk
- Juice of 1 orange
- 2 eggs
- 1 tsp vanilla extract
- 1 pear, cored and diced
- 50g fresh or frozen blueberries

Instructions

Preheat the oven to 180 degrees C and lightly grease a 6-hole muffin tin.

Place the oats into your Ninja Kitchen Nutri Ninja blender and whizz up until a flour is formed.

Add in the ground almonds, coconut sugar, orange zest and juice, cinnamon and baking powder, milk, eggs and vanilla and whizz again to form a batter.

Stir in the chopped pear and blueberries then spoon between the muffin holes to reach the top.

Bake for 15-20 minutes until risen, golden and firm to the touch. Enjoy warm!
