Peanut, Coconut & Lucuma Fudge

It’s amazing what tasty treats you can do with just a few ingredients, especially when they are all naturally gluten, dairy and refined sugar free.

Peanut, Coconut & Lucuma Fudge

If you love peanut butter then this recipe is definitely for you, be careful though as its very easy to demolish the whole lot in seconds!


  • 300g smooth peanut (add ¼ tsp salt if you use unsalted pb)
  • 65g malted coconut oil
  • 60ml maple syrup
  • 25g lucuma powder
  • 20g grated coconut

Prep Time


  1. Start by lining a 7×7 inch square brownie tin with baking paper

  2. Add all the ingredients to your blender and pulse 3-4 times until everything is combined

  3. Pour the fudge mixture into the lined tin and place it in the fridge for 2hrs to set

  4. Cut the fudge into bitesize pieces and store it in fridge (if you don’t eat it all at once!)

After being diagnosed with coeliac disease and IBS, I had to completely overhaul my diet. I found that the majority of gluten-free food on offer was tasteless, stodgy and full of sugar. I was eventually forced to embark on the low FODMAP diet, which meant I had to make even more changes to my diet. After a short while I became disillusioned with the tasteless, stodgy and sugar-laden foods available to me, so I decided to create my own.
