It’s amazing what tasty treats you can do with just a few ingredients, especially when they are all naturally gluten, dairy and refined sugar free.
Peanut, Coconut & Lucuma Fudge
If you love peanut butter then this recipe is definitely for you, be careful though as its very easy to demolish the whole lot in seconds!
- 300g smooth peanut (add ¼ tsp salt if you use unsalted pb)
- 65g malted coconut oil
- 60ml maple syrup
- 25g lucuma powder
- 20g grated coconut
Start by lining a 7×7 inch square brownie tin with baking paper
Add all the ingredients to your blender and pulse 3-4 times until everything is combined
Pour the fudge mixture into the lined tin and place it in the fridge for 2hrs to set
Cut the fudge into bitesize pieces and store it in fridge (if you don’t eat it all at once!)
