Peanut Butter Protein Cups

Peanut butter cups are such a simple recipe to follow, yet so delicious! Try this gluten free, low fodmap, vegan version for a high protein treat.

  • For The Base
  • 250g smooth peanut butter
  • 45ml maple syrup
  • 30g melted coconut oil
  • Pinch of salt
  • 35g vegan vanilla protein powder
  • For The Topping
  • 150g dark chocolate chips (dairy free)
  • Cacao nibs (optional)
Prep Time


  1. Place 10 cupcake cases in a cupcake tray

  2. Add the peanut butter, maple syrup, oil and salt to your food processor

  3. Pulse until you have a smooth paste

  4. Add the protein powder and pulse again until combined

  5. Add the protein powder and pulse again until combined

  6. Spoon the peanut butter mixture into the cupcake cases

  7. Place the tray in the fridge for 1 hour to set

  8. Melt the chocolate chips

  9. Spoon the melted chocolate over the peanut butter mixture, sprinkle on the cacao nibs if using

  10. Place the tray back in the fridge for an hour to set

  11. Remove the chocolate cups from the tray and store in the fridge
