Peanut Butter & Berry Chia Breakfast Parfait

This parfait it’s the ultimate breakfast treat! Although it feels so indulgent, it is packed with so much plant goodness that it will keep you feeling energised all morning.

The chia seeds apart from creating a super thick and creamy pudding, are a great source of protein, fibres and skin loving omegas 3. The peanut butter adds a lovely note of nuttiness and richness and the berry “mousse” add a super refreshing berry flavour which will make you dream of summer.

This breakfast is ideal for when you have some extra time and you want to treat yourself to something a bit more special or it’s also a great idea for a low sugar dessert.

Ingredients

  • FOR THE CHIA PUDDING LAYER
  • 70g chia seeds
  • 100ml almond milk
  • 2 tbsp coconut yogurt
  • 1/2 tsp vanilla extract
  • FOR THE PEANUT BUTTER LAYER
  • 4 tbsp peanut butter of your choice
  • FOR THE BERRY MOUSSE LAYER
  • 1 frozen banana
  • 1/2 avocado
  • 1 handful of frozen berries
  • 2 dates (optional)

Instructions

  1. Start by making the chia pudding. In a mixing bowl mix the chia seeds with the almond milk, coconut yogurt and vanilla essence. It’s best to use a whisk to combine all the ingredients together and to avoid any lumps.

  2. Cover the bowl with some cling film or a plate and let it sit in the fridge for at least 1 hour or even better overnight. The chia pudding is ready when is thick and gloopy.

  3. Once you are ready to serve, divide the chia pudding into 2 separate jars and top it with the 2 tablespoons of peanut butter each.

  4. Place the frozen banana, ½ avocado, frozen berries and dates (if using) into your food processor or blender and blend until smooth and creamy. Top the jar with the berry mousse and decorate with some fresh berries.
