Peanut Butter, Banana & Raisin Breakfast Cookies

Do you ever feel too lazy to make breakfast? Are you often low on time in the mornings? If you answered ‘yes’ this recipe is for you!
These delicious, nutritious, filling breakfast cookies will give you all the energy you need in the morning…and if you make a batch at the start of the week they’re ready to grab and go! The cookies are made from oats for that slow release of energy as well as banana for added energy and natural sweetness, raisins for a bit of juiciness and peanut butter for healthy fats as well as scrumptious flavour.

These cookies are also super adaptable. Don’t like raisins? Swap them for dried cranberries or chopped nuts. Don’t like peanut butter? Swap for almond butter, tahini or simply sub a little extra coconut oil or vegan butter.

Ingredients

  • 100g oats
  • 100g gluten free flour
  • 3 tbsp maple syrup
  • 3 tbsp peanut butter
  • 2 tbsp coconut oil, melted
  • 1 ripe banana
  • 60g raisins
  • 4 tbsp almond milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp cinnamon powder
  • Pinch of salt

Instructions

  1. Pre-heat the oven to 160 degrees celsius.

  2. Combine the oats, flour, raisins, baking powder, baking powder and pinch of salt in a mixing bowl.

  3. Add the remaining ingredients into your blender and blend together into a smooth mixture.

  4. Pour the wet mixture into the bowl with the dry ingredients. Mix well.

  5. Line a baking tray with baking paper. Shape the cookie mixture into cookie shapes using your hands and place on the tray. You should make 6-8.

  6. Bake in the oven for around 12 minutes or until golden.

  7. Allow to cool for at least 10 minutes before tucking in!
