Oven Baked Pea & Mint Falafel

This is a delicious twist on a classic falafel. Peas and mint give them a fresh flavour, while edamame beans add protein.

Ingredients

  • For The Falafel
  • 150g frozen peas
  • 150g frozen edamame beans
  • 330g cooked chickpeas
  • 4 tbsp gram (chickpea) flour
  • 1 tbsp Olive oil
  • 1 tbsp tahini
  • 1 tbsp maple syrup
  • 2 tsp lemon juice
  • 1 tsp cumin
  • 1 tsp garlic granules
  • 10 fresh mint leaves
  • Salt & Pepper
  • For The Sauce
  • 2 tbsp tahini
  • 4 tbsp lemon juice
  • A sprinkle of hot chilli powder

Instructions

  1. Place all of the ingredients in you blender or food processor. Pulse until they are combined but the mixture is not totally smooth.

  2. Take a small handful of the mixture and shape it into a ball, then press down to form a flatter patty. Repeat until all of the mixture has been used up. Put the falafels on a plate.

  3. Leave the falafel in the fridge for 10 minutes while you heat the oven to 180°C.

  4. Carefully transfer the falafel to a lined baking tray and cook for 20 minutes on one side and 10 on the other side.

  5. To make the sauce, combine all of the ingredients and stir until it becomes thick.
