No Meat “Meatballs”

Packed with flavour, these “meatballs” are delicious, super quick to make and fabulous for making a big batch and reheating throughout the week. Free from meat and dairy, these will blow your meat eating friends socks off. Baking gives them a yummy crispy layer. You won’t want to share!

Ingredients

  • 1 can chickpeas (drained and rinsed)
  • 2 garlic cloves (crushed)
  • 1 white onion (diced)
  • 30g ground almonds
  • 30g walnuts
  • 50g oats
  • 60g rice (cooked)
  • 60g quinoa (cooked)
  • 1 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • 1 tsp paprika
  • 1 tsp chilli powder
  • 2 tbsp tomato purée
  • 1 tsp oregano
  • Pinch of salt and pepper

Instructions

  1. Preheat oven to 180° and line two baking trays with parchment paper

  2. In the Ninja food processor add the chickpeas, garlic, white onion, walnuts, almonds, oats and rice. Blitz until a rough meal is formed

  3. In a bowl add the balsamic vinegar, soy sauce, paprika, chilli powder, tomato puree, oregano, salt and pepper. Combine

  4. Empty the mixture from your Ninja into a large bowl, and add quinoa plus the seasoning mixture

  5. Combine together until thoroughly mixed (use hands if needed)

  6. Form mixture into approximately 12 large balls. If you have time then pop in the fridge to harden for 30 minutes

  7. Next, place on baking trays and bake in the oven for 25 minutes. Turn them over after 10 minutes

  8. Serve with pasta and a tomato sauce of choice
