No-Bake Tiger Nut Vegan Protein Bars

This gluten free, low FODMAP, refined sugar free and vegan protein bar recipe are so easy to make. You don’t even need to cook them! If, like myself, you find that decent vegan protein bars are a little out of your price range then why not make your own? Tiger nut flour is an underrated ingredient and adds a natural sweetness to this recipe.

Ingredients

  • 120g tiger nut flour
  • 90g gluten free oat flour
  • 50g chocolate vegan protein
  • 30g cacao nibs
  • 45g melted coconut oi
  • 105ml maple syrup
  • 120g nut butter (I used peanut butter)
  • 1 tsp vanilla extract

Instructions

  1. Line a 7×7 inch square cake tin with baking paper.

  2. Mix the tiger nut flour, oat flour, protein and cacao nibs together in a bowl.

  3. Add the oil, syrup, nut butter and vanilla to your blender or food processor and pulse 3-4 time until the mixture is smooth.

  4. Pour the mixture into the bowl of dry ingredients and stir everything together until combined (it will resemble a soft cookie dough).

  5. Press the mixture into the tin and place it in the fridge to set for 2hrs before cutting into bars.

After being diagnosed with coeliac disease and IBS, I had to completely overhaul my diet. I found that the majority of gluten-free food on offer was tasteless, stodgy and full of sugar. I was eventually forced to embark on the low FODMAP diet, which meant I had to make even more changes to my diet. After a short while I became disillusioned with the tasteless, stodgy and sugar-laden foods available to me, so I decided to create my own.
