No Bake Strawberry & Gin Cheesecakes

A perfect dessert to serve at a gathering with friends, this no bake cheesecake has a dash of Blackwoods Gin for a boozy surprise!

Ingredients

  • For the base
  • 1 cup oats
  • 1/3 cup pistachio nuts
  • 1 tsp matcha powder
  • Pinch of salt
  • 2 tbsp agave
  • 1 tbsp coconut oil
  • For the cheesecake layer
  • 1 cup cashews
  • Dash vanilla extract
  • 1/2 cup frozen raspberries
  • 1 cup fresh strawberries
  • 250g low fat Greek yoghurt
  • 4 tbsp coconut oil
  • 4 tbsp agave syrup
  • Juice from 1/2 fresh lemon
  • 4 tbsp Blackwoods Gin
  • 1/3 cup almond milk

Instructions

  1. To make the base, combine the oats and nuts in your Ninja food processor and blitz until they form a fine crumb

  2. Add in the coconut oil, matcha, salt and sweetener, then blend again until everything is well combined and can be pressed together between your fingers

  3. Line a brownie dish/tray with grease-proof paper and transfer the base mixture into the dish. Firmly press the mixture into the base to create a smooth layer, then pop this into the freezer to set

  4. For the cheesecake filling, in your Ninja Blender, add the cashews, yoghurt, fruit, coconut oil, sweetener and lemon juice and blend until smooth and creamy. Gradually drizzle in a little almond milk if needed to help everything blend

  5. Pour in the vanilla extract and Blackwoods Gin (this can be done to taste) and blend again

  6. Pour the berry cheesecake filling over the base and allow the bars to set in the freezer for 5 hours minimum

  7. Once ready, allow to thaw slightly before slicing into portions, topping with your favourite fruit and enjoy!
