No-Bake Cake Balls

These are a chocolate lovers dream! A delicious ball of vegan & gluten free cake-dough coated in rich dark chocolate… yes, they are as heavenly as they sound! These little balls of  yumminess are so easy to make, require only a few ingredients and make just the best sweet snack when those chocolate cravings hit.

 

Make at the beginning of the week and store in the fridge for up to 5 days!

Ingredients

  • 180g ground almonds
  • 20g cacao powder
  • 2 tbsp cashew butter
  • 4 tbsp maple syrup
  • 5 tbsp almond milk
  • 1 tsp vanilla extract
  • Pinch of salt
  • 60g dark chocolate

Instructions

  1. Add all the ingredients apart from the dark chocolate into your food processor and blend until combined together

  2. Roll the mixture into balls using your hands. You should make around 6 balls. Place into the fridge for 1 hour to firm up

  3. Melt the chocolate in a bain-marie. Remove the balls from the fridge and carefully coat each ball in the chocolate. Place back into the fridge for a further hour to set
