Mocha Loaf

This easy and tasty mocha loaf is full of a rich Percol coffee and has a delicious moist chocolate finish.

Ingredients

  • 320g plain flour
  • 1 tsp. baking powder
  • 1 tbsp. cacao powder
  • 90g coconut sugar
  • 60ml maple syrup
  • 125ml brewed Percol Coffee
  • 120ml oat milk
  • 120ml rapeseed oil
  • 2 large eggs
  • Mocha Drizzle
  • 100g dark chocolate
  • 3 tbsp. Percol Coffee
  • Chopped almonds (optional)

Instructions

  1. Begin by pre-heating the oven to 180C degrees.

  2. Using your Ninja Coffee Bar and Percol Coffee brew 125 ml of coffee.

  3. Using a large mixing bowl, sieve the flour along with the baking powder, coconut sugar and cacao powder and stir to mix the dry ingredients together.

  4. Place the coffee, maple syrup, oat milk and rapeseed oil into the bowl of your Ninja food processor and pulse 3-4 times, place a hole in the middle of the dry ingredients and pour the mixture over and mix to combine the ingredients together.

  5. Beat the eggs in a separate bowl and pour over the cake batter and combine gently.

  6. Pour the batter into a greased loaf tin and bake in the oven for 45-55 minutes.

  7. Remove the cake from the oven and allow it to cool before removing it from the tin.

  8. Prepare the chocolate drizzle by melting the dark chocolate oven a water bain-marie and pour the coffee.

  9. Remove the cake from the tin and drizzle with the mocha sauce and sprinkle with some chopped almonds.
