Matcha Pancakes

Matcha is amazingly wonderful; it has flavour, nutrition, mood effects, and ritual. Matcha is a green tea that comes from japan and when combined with these sweet pancake ingredients provides a unique taste sensation. These pancakes are an amazing breakfast and brunch option that not only look fab but taste great too.

This dish is very versatile so you can mix it up with your favourite toppings.


  • 1 banana
  • 1 egg
  • 3 tbsp Gluten-Free flour (Normal plain flour is fine too)
  • 1 1/2 tsp Matcha powder (Lalaniandco is my favourite)
  • 2 tbsp natural Greek yogurt (Skyr is my favourite)
  • 1 tsp coconut oil (for frying)
Prep Time


  1. Add all ingredients without the coconut oil into your Ninja blender and use the Blend setting until a smooth consistency is reached.

  2. Heat the coconut oil in a frying pan, once melted, pour the oil into a ceramic cup and turn down the heat.

  3. Pour a small amount of mixture into the pan to create small round pancakes; you can normally fit around 3 depending on size.

  4. Cook for around 60/90 seconds and then flip to cook on the other side. Add to a plate, and repeat the process.

  5. Top your pancakes with blueberries, blackberries, raspberries, yoghurt, couli and all your favourites!
