Jackfruit Burger and Sweet Potato Chips

I knew the second I received the Ninja Foodi I had to make crispy chips and carrots because they are my two favourite foods to enjoy extremely crispy! I thought that would pair nicely with a jackfruit burger. The stuffed pepper adds more depth, it’s important to get a balanced meal! This meal was delicious and I can’t wait to experiment more with all the different and easy recipes I can make.


Jackfruit Burger and Sweet Potato Chips

Ingredients

  • 1 large sweet potato
  • 4 medium carrots
  • 3 garlic cloves (made into purée/minced)
  • Seasonings: puréed garlic, 1 tbsp oregano, chilli oil and a sprinkle of pepper
  • 1/2 red pepper
  • 2 tbsp prepared black bean chilli
  • Pinch of grated vegan cheese
  • 1 jackfruit burger
  • 5 tenderstem broccoli
  • 1 tbsp beetroot hummus and guacamole

Instructions

  1. Pre heat the Foodi on the Air Crips setting for 4 minutes before cooking.

  2. Chop the carrots and sweet potato approximately 1cm thick and place into a mixing bowl. Add the seasonings (puréed garlic, oregano, chilli oil and pepper).

  3. Place the veg and potatoes into the Cook and Crisp Basket – Use the Air Crisp setting on the Foodi set to 15 minutes at 190 degrees and then press start

  4. Half way through, open the lid and mix/shake to ensure even cooking. At this stage add the stuffed pepper and let it all cook until the Foodi beeps, indicating it’s finished

  5. Place on the side whilst you cook the jackfruit burger. Place burger in the Foodi on the reversible rack and set to bake/roast setting. Cook for 15 minutes at 190 degrees. Add the broccoli in the last 5 minutes. The Foodi will beep when the time is up

  6. Plate up, add the dips and enjoy!
