Hot Chocolate Brownie Dessert

This decadent gluten and dairy free dessert has the texture of a cookie on the outside with the gooey, richness of a brownie on the inside. It’s so simple to make using the Ninja Foodi and is the perfect indulgent treat served with peanut butter chocolate sauce and ice cream!

Ingredients

  • 55g ground almonds
  • 100g rice flour
  • 45g cacao powder
  • 1/2 tsp baking powder
  • Pinch of salt
  • 65g dark chocolate chips
  • 100ml maple syrup
  • 90g melted coconut oil
  • 1 tsp vanilla
  • 60ml coconut milk
  • Optional:
  • Ice cream
  • (For the Sauce)
  • 4 tbsp smooth peanut butter
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 2 tbsp cacao powder

Instructions

  1. Set the Ninja Foodi to preheat to 160oc using the Bake/Roast setting

  2. Line a 7 inch round cake tin with baking paper

  3. Combine the dry ingredients together in a bowl

  4. Stir in the remaining ingredients until you have a thick cake batter

  5. Pour the mixture evenly into the lined cake tin

  6. Cover with foil and gently place in the Foodi

  7. Set the Foodi again to 160oc with the timer set for 40 minutes

  8. When the timer beeps, carefully remove the tin from the Foodi

  9. To make the sauce, simply whisk together ingredients

  10. Serve in slices, still warm, with the chocolate sauce and a scoop or two of ice cream
