Autumn is here; this soup fits this season perfectly. This delicious soup is packed with delicious turmeric and fresh coriander. This soup is very simple to make and only needs a selection of simple ingredients.
Homemade Carrot & Turmeric Soup
- 1 tbsp olive oil
- 1 medium-sized onion, chopped
- 2 garlic cloves
- 1/4 tsp turmeric powder
- 500g carrots, peeled and chopped
- 1.2l vegetable stock
- Handful fresh coriander
- Salt & pepper, to taste
Heat 1 tbsp olive oil in a large pan, add the chopped onion, crushed garlic, then fry for 5 minutes until softened.
Stir in the turmeric powder and the chopped carrots – add the vegetable stock along with salt and pepper to taste, bring it to a boil then reduce the temperature.
Cover and cook for approximately 18-20 minutes until the carrots are tender.
Put to one side and allow to cool to room temperature.
Pour the ingredients into the jug of your Ninja Kitchen blender, add fresh coriander and blitz until smooth – adjust seasoning if needed.
Pour back into a pan and heat through until warm.
