Hazelnut Silk Pie

A vegan and gluten free Chocolate Hazelnut Pie made with silken tofu. This is a recipe that is loved by all who try it and is perfect for taking along to a get together.

Ingredients

  • For the base
  • 75g hazelnuts
  • 2 tbsp cacao
  • 3 tbsp maple syrup
  • 60ml coconut oil
  • 150g gluten free oats (or 280g Oreos or similar product, blended)
  • Pinch of salt
  • For the filling
  • 125g hazelnut or other nut butter
  • 320ml (2 tins) coconut cream
  • 450g silken tofu
  • 350g dark chocolate (vegan)
  • 80g maple syrup or alternative liquid sweetener
  • 3 tbsp chopped toasted hazelnuts

Instructions

  1. Preheat the oven to 180C or Gas Mark 4

  2. Lightly grease a 23 cm cake tin

  3. Add the hazelnuts to a blender and blend into a fine crumb. Add the remaining ingredients to the blender and process until combined. If the dough is a little dry, add a splash of water to it

  4. Press into the tin and poke holes into the bottom. Bake for 12 minutes until lightly golden

    *If using Oreos, skip the baking stage and put into the fridge to set whilst you make your filling

  5. Remove and set aside to cool

  6. Melt the chocolate in a large bowl set over a pan of boiling water (make sure the water is not touching the bottom of the pan)

  7. Place all of the filling ingredients into the blender and blend until combined. Then stir in the melted chocolate after it has cooled a little

  8. Pour over the base and spread evenly

  9. Top with chopped Hazelnuts

  10. Place in the fridge to set for 2 hours. Serve and enjoy!
