This classic cold soup is served in some of the finest fine dining locations in the World. You can serve it at your next social gathering with the help of your Ninja Blender.
Green Gazpacho Soup with Rose Petal Ice
- 100g spinach
- 2 garlic cloves
- 1 cucumber, deseeded and chopped
- 1/2 green chilli, deseeded
- 5 mint leaves
- 1 ripened avocado, peeled and stones
- 4 spring onions
- 4 tbsp coconut natural yoghurt
- 2 tbsp extra virgin olive oil
- 2 tbsp white wine
- Pinch salt
- Pinch pepper
Place all of the above ingredients into the pitcher of your Nutri Ninja Blender.
PULSE gradually while gradually adding water until the mixture becomes smooth and consistent.
Place the gazpacho in the fridge and chill until you’re ready to serve.
Using an ice cube tray place rose petals into each compartment and add water.
Freeze into rose ice cubes and pop out when ready to serve.
Create a beautiful avocado rose, or slice it evenly and place the slices in a bowl in an attractive formation. To see how I make mine check out my video on my Youtube Channel.
Pour the gazpacho around the avocado and garnish with fresh basil, pea shoots, the ice cubes, baby tomatoes and a drizzle of olive oil.
