Goji Berry, Pumpkin Seed & Coconut Quinoa Protein Slice

Ingredients

  • 120g oat flour
  • 2 scoops Kin Nutrition Vanilla Protein Powder
  • 2 tbsp ground flaxseed
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 2 large bananas
  • 3 tbsp nut butter
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 60g uncooked quinoa, rinsed
  • 30g desiccated coconut
  • 40g goji berries
  • 30g pumpkin seeds

Instructions

  1. Preheat the oven to 180 degrees and grease and line a 20cm round tin.

  2. Mix together the oat flour, protein powder, flaxseed, cinnamon and baking powder in a large bowl.

  3. Place the mashed bananas, nut butter, maple syrup and vanilla in your Ninja Kitchen Auto IQ and whizz up until smooth then pour into the dry ingredients along with the quinoa, coconut, goji berries and pumpkin seeds and mix to combine.

  4. Spoon into the tin and smooth out evenly then bake for 15-20 minutes until firmed up and golden. Leave to cool then cut into 6-8 slices and serve!
