A delicious and protein-packed vegan and gluten-free cookie, packed with fresh carrots and sweet cinnamon. These cookies are a fantastic snack if you are looking to increase your protein intake. A delicious snack which, can be added to yours and your children’s lunchbox. This recipe makes approximately 8 large cookies.
Gluten-Free & Vegan Carrot, Pumpkin Seeds & Chia Seeds Cookies
- 250g carrots, peeled
- 200g gluten-free oats
- 70g stevia
- 1/2 tsp pink salt
- 4 tbsp chia seeds
- 6 tbsp pumpkin seeds
- 120ml coconut oil
Begin by pre-heating the oven to 180c degrees.
Using the grating disc and spindle of your Ninja Kitchen System or a good old-fashioned grater, grate the carrots.
Remove the disc and spindle from your food processor bowl and add the dough blade, pour the remaining ingredients into the bowl – pulse a few times to form the cookies dough.
Using a baking tray – lined with greaseproof paper. Begin rolling the cookies into balls and place them on the baking tray.
Press down the cookies and place in the oven to bake, bake in the oven for 15-18 minutes or until lightly browned.
Remove the cookies from the oven and place on a wire rack to cool.
