Gluten Free Orange and Polenta Cake

This is one of my favourite cakes and it is so delicious and easy to put together. You can make this Dairy Free by using Flax Eggs (Made by combining 1 tbsp of ground Flaxseed and 2.5 tbsp Water and resting for 5 minutes (per egg)).

A delicious cake that is perfect with a hot brew.

Ingredients

  • For the cake
  • 3 Eggs
  • 100g light Brown Sugar
  • 80 ml Olive Oil
  • Juice and zest of 2 Oranges
  • 1 tsp Orange Blossom Water
  • 1 tsp Vanilla Extract
  • 190g Polenta
  • 75g ground Almonds
  • 1/4 tsp Salt
  • 1 1/2 tsp Baking Powder
  • For the icing
  • 115g Cashews, soaked 2-3 hours and rinsed
  • 2 tbsp Coconut Oil, melted
  • 3 tbsp Orange Juice
  • 1 tbsp Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 1- 4 tbsp Water (For blending)

Instructions

  1. Cake

    Line a loaf tin with greaseproof paper.

  2. Whisk the eggs and sugar until light and creamy. Slowly pour in the olive oil and continue to whisk until the oil is combined.

  3. Whisk in the orange juice and zest, orange blossom water and vanilla.

  4. In a separate bowl, combine the polenta, ground almonds, baking powder and salt.

  5. Sieve into the wet ingredients and mix well.

  6. Pour into tin and bake for 35-40 minutes or until a skewer inserted into the middle comes out clean.

  7. Leave to cool in the tin for about 10 minutes then turn out to cool on a wire rack.

  8. Icing

    In a high powered blender combine the Cashews, Coconut Oil, Orange Juice, Maple Syrup, Vanilla Extract and Salt and combine until creamy. Add more water if need be.

  9. Assembly

    Drizzle the cashew dressing over the cake whilst it is still warm and enjoy!
