Gluten Free Coconut, Cinnamon & Quinoa Puff Granola

Granola is such a simple yet versatile breakfast and snack option. I always keep a jar of homemade granola in my kitchen and this version is definitely one of my new favourites!

Gluten Free Coconut, Cinnamon & Quinoa Puff Granola

  • 160g gluten free rolled oats
  • 15g ground flaxseeds
  • 40g desiccated coconut
  • 20g pumpkin seeds
  • 20g sunflower seeds
  • 30g almonds
  • 3 tsp ground cinnamon
  • 3 tbsp maple syrup
  • 4 tbsp melted coconut oil
  • 20g quinoa puffs (or rice puffs)
Prep Time


  1. Preheat the oven to 150oc and line a large baking tray with baking paper

  2. Pulse 25g of the oats in a blender until you have a course oat flour

  3. Transfer the oat flour to a large bowl

  4. Pulse the almonds in the blender 3 times so they are roughly chopped

  5. Add the almonds and the remaining ingredients (except the quinoa puffs) to the oat flour bowl

  6. Combine everything together

  7. Spread the granola out on the baking tray

  8. Bake the granola for 10mins, then stir through the quinoa puffs

  9. Bake for another 10 mins

  10. Leave the granola to cool on the tray before transferring to an airtight container
