Gluten-Free Chocolate and Coconut Cream Cake

A deliciously coconut and chocolate gluten free cake. This cake is extremely rich, packed with dark chocolate; the combination of the chocolate and the coconut is absolutely divine.

Gluten-Free Chocolate and Coconut Cream Cake

  • 200g gluten-free flour
  • 70g oats
  • 100g molasses
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 100g coconut cream
  • 100g melted dark chocolate
  • 150g melted butter
  • 5 eggs
  • 100g coconut cream
  • 100g grated dark chocolate
Prep Time


  1. Begin by pre-heating the oven to 180C degrees.

  2. Separate the egg whites from the egg yolks and whisk the egg whites until fluffy. Using the bowl of your ninja kitchen and the metal blade, pour in the dry ingredients and pulse to allow the dry ingredients to combine together.

  3. Pour in the coconut cream, melted dark chocolate, egg yolks and melted butter and pulse to form the cake batter. Transfer the cake batter directly into a mixing bowl, and add the egg whites and fold the eggs whites and the cake batter.

  4. Pour the batter in a greased baking tin, and bake for 45-55 minutes (pierce the cake to make sure it has baked through).

  5. Remove the cake from the oven, and allow it to cool for approximately 15 minutes before moving it from the tin, then remove from the tin and place on a wire rack to cool further.

  6. Prepare the chocolate topping of the cake by grating 100g of dark chocolate using a cheese grater and mixing the chocolate shavings with the coconut cream, place in the fridge for the coconut cream to set. Once the cake has cooled and the coconut cream has set, pour the coconut cream over the top of the cake and spread evenly. Slice and enjoy!
