Ginger & Chocolate Chip Oat Bars

These gluten free bars make a delicious on-the-go breakfast or snack. I love crumbling them into coconut yoghurt or drizzling over some melted chocolate for a bit of extra indulgence!

Ginger & Chocolate Chip Oat Bars

  • 310g gluten free rolled oats
  • 60g melted coconut oil
  • 90g smooth peanut butter
  • 105ml maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 4 tsp ground ginger
  • 60g dark chocolate chips
  • 120ml coconut/almond/oat milk
Prep Time


  1. Preheat the oven to 160c and line a square cake tin with baking paper

  2. Pulse 250g of the oats in your Ninja processor 4 times to break down the oats slightly

  3. Empty into a bowl then blend the remaining 60g until you have oat flour

  4. Add the oat flour to the bowl, along with the rest of the ingredients

  5. Combine the mixture together then spread it evenly in the lined cake tin

  6. Bake for 25mins

  7. Leave to cool in the tin then place in the fridge for an hour to set

  8. Cut into bars and store in the fridge
